How do they match the colour of their skins to the surroundings?

My understanding (long ago recollection, that might be totally faulty) is that they have skin with lots of different patches of colour, but the size of the different colour patches changes, so altering the balance of colour in the skin.

I read in some sources that chameleons don't match their color to their surroundings. The color change was due to their change in emotions. I don't know if this has been discovered during 2007, though.
