Yeah that's true.
But if you are talking in terms of an actually living being, I still think skin is the most important, breaches of skin integrity are the cause of many deaths and diseases.

Without your skin you would die from dehydration before you got a chance to catch any infection.

That's very true, I was thinking on the lines of burns victims and how they are affected when their skin in compromised.

I dont think we have a most important cell; We need most of them to survive, so all of these essential cells are vitaly important

I would go with the neurons, especially those in the brain and spinal cord, because you can regenerate a skin cell or several pretty easily, so no one skin cell is all that important.  But if you start killing cells in your spinal cord, you end up paralyzed, as I think these cells are nearly irreplaceable.
