Title: soup cools at the sides faster, but why.
Post by: paul.fr on 07/08/2007 22:29:28
When Anastasia was complaining that her soup was too hot, i told her to eat it from the side first knowing that it would be cooler there. But why is it cooler at the sides?

The air is removing energy in the form of heat from the bowl, which in turn is removing it from the energy source, the soup. The soup on the side of the bowl is closest to this energy removal, and hence cools more quickly. Skimming from the top will also provide cooler soup, but may not be as cool because of convection currents within the soup.

It's also bad manners to do it this way - soup should be spooned on the far side of the spoon from the far side of the bowl.......

In addition to what dentstudent wrote, if you use typical bowls, those  with "a lateral ring" (I don't know how to say it better), the soup on that "ring" cools faster even because that ring is colder than the rest of the bowl.
