What makes chamois leather so much more water absorbent than a regular towel?

It is the size of the openings between the fibrous filaments that make up the leather; this according to a quick Google. I didn't find the physics behind it. The reason it can filter water out of fuel is that when the fuel molecules are absorbed first, the natural aversion of the fuel for water, keeps the water from passing.
