Title: Mouldy Bread..what is it good for ?

..absolutely nothing ...say it again...oh yeah ..uh hu uh hu !!...sang Edwin Starr before he changed it to 'war ' instead of ' mouldy bread '


ahem...When we discover mouldy badness on some bread it's time to say ..bye bye bread !!....

....we mostly give it to the birdies...but is it harmful to them [?]...is it harmful to me too if I eat some mouldy bread  [?] Should we keep bread in the fridge or in a bread container [?]

Perhaps some info on the science of mouldy bread would be nice [?]

I don't want this answer YEASTterday...I KNEAD it today ..so RISE to the occasion !!

please find herewith a link to mouldy bread  obviously having a dig cos i work in a bakery, well i donut loaf around,so i dont have crusty bloomers, and i get plenty of crumpet, lol

I generally just scrape the mould off and eat the bread anyway If your still not sure toast it! stale bread makes the best toast anyway

Don't eat mouldy bread Neil, it can cause psychosis and gangrene:-

"Ergot Poisoning / St. Anthony’s Fire

Probably the oldest case on record of mold ingestion toxicity dates to 55 B.C. in Denmark. The body of a man called “Tolland Man” was preserved in mud in a swamp for over 2,000 years. 302  The well-preserved body showed signs of a very violent death. It appears that he was first strangled and then his throat was cut. Investigators wondered about the circumstances leading up to his death. Further investigation revealed traces of Claviceps purpurea in his stomach. This is the fungus that produces the mycotoxin that causes ergot poisoning or ergotism. Ergot poisoning causes psychotic behavior in individuals who inadvertently ingest it in moldy foodstuffs. A sudden onset of psychotic behavior may have led to his untimely and violent death. (Modern research has shown the ergot contain lysergic acid amines. One of these amines is known as LSD.)

In Medieval times, ergot poisoning was known as St. Anthony’s Fire. In the year 994 alone, over 40,000 people died of the affliction. In the 13th century the Mongol invasion of Russia was stopped by the numerous deaths of Tartar horses from mold contaminated grain taken from Russian stores. In 1777 in France, 8,000 people died of gangrenous ergotism. "

UH OH !!!....THANKS ROBERT !!!....That must explain the lack of rationale behind my entire life !!...I must have inadvertently ingested some when I was a lot younger !...

My ego is somewhat deflated....it always has been...oh great !! (low self esteem mode) !....

Apparently fungi improve the flavour of coffee:-

" Fungi make coffee more tasty

Fungi are the secrets to tasty coffee, says a Brazilian researcher who is the first to identify the moulds that give coffee its distinctive range of flavours and aromas.

Dr Martha Taniwaki of Brazil's Institute of Food Technology presented her research at the International Mycological Conference in Cairns this week.

Dr Taniwaki says while the characteristics of the bean partly determine taste and aroma, naturally occurring fungi also put the zing in your favourite brew.

"We are doing a project to correlate the presence of certain species of fungi in coffee with coffee flavour," she said.

The research team collected raw coffee beans from farms in Sao Paulo and Minas Gerais in Brazil, disinfected them, incubated them for seven days, and isolated the fungi.

Then the team got down to the pleasant part of the experiment. They roasted, ground, brewed and drank the raw samples, rating them for body, aroma, acidity, bitterness, astringency and sweetness.

Some of the flavours associated with moulds included floral, citric, caramel, chocolate and toast.

The fungi occur naturally inside the coffee been and are associated with regional characteristics caused by soil, climate and humidity.

While the pleasant taste-producing fungi are not harmful to health, others can be toxic, and these often produce rancid, stinky, smoky, woody or fermented bouquets. Dr Tanawaki says her research is currently focused on isolating the various fungi and how they are metabolised.

But it may be possible to use the knowledge to produce ranges of coffee with a particular flavour, potentially complementing the traditional bottles of vanilla or hazelnut flavourings found at your local cafe.

"We can encourage the good fungi to grow and use it to produce good flavours, like wine or other food like cheese where you use mould or yeast to give a special flavour," she said. "

In refernce to the blue cheese problem....As an awesome, but modest chef, i know that Stilton is made from fresh pasteurized milk  to which acid forming bacteria (starter cultures), a milk clotting agent (such as rennet) and “penicillium roqueforti” (blue mold spores, i know cuz i googled that 1)  are added. (ever noticed mould on bread is green?) Once the curds have formed, the whey is removed and the curds allowed to drain overnight. The following day, the curd is then cut into blocks to allow further drainage before being milled and salted. (we all know salting something kills harmful bacteria) so to bottom line it...stiltons actually good for you neil..u no longer have to worry. hope thats helped

also as an interesting foot note stilton is still handmade and can only be called stilton if made in 3 specific counties...hmmmmmm
