What would happen if all the “1’s” and “0’s” which represent all data
suddenly and simultaneously reversed (that is, the 1s turn to 0s and the 0s turn to 1s)?

Where do you have to go to get a straight answer?

There are ways of coding data which ignore the actual sign of a binary signal and these would be immune from your proposed form of disruption. Say that you represented a 0 by a change (01, or 10) and a 1 by no change (11 or 00).* By sending twice as many symbols down the line, the information would remain intact. There are many other coding systems which can be immune to all sorts of weird distortions and interferences.
* Of course, you have to be looking at the incoming stream in sync so that you can actually identify the correct pairs. If you started looking, one bit late or one bit early, you would decode it all wrong because you'd be looking the last of one pair and the first of the next. But that's easily coped with.

Here, you are talking about ASCII.
It would be very easy to recover the right values from the list you quote AND to ascertain if things had been flipped or not. You would just need to look and see if the leading digit were 0. If it's zero you leave it alone, if it's 1 you flip all the digits and you get the right answer.
It's an example of 'redundancy'. You don't use all possible combinations of your available bits for data but the extra capacity can help resolve errors.
