I sometimes focus on what I am writing, but sometimes I am focused on the thought whilst I am writing, this is when I produce gibberish. I simply want to keep the thought and share the thought.

If you aren't suffering mood swings and depression, you sound quite well balanced. It might be worth looking at ways of structuring your thoughts, have you tried mind mapping? It's really useful because as well as being used for brainstorming and note taking it can be used to explore links between ideas.
