I think that it does move.. Because of the nervous system or something, and it flinches every now and then. But I don't think it'll run around..

Speaking a expert supervisor of chicken butchering I am here to confirm to you that Yes! Indeedy they DO run around with their heads cut off until they bleed to death.. So sad!
I have been present for the butchering of several thousand chickens over the years.. It is a nasty business!
