Title: Why Does Rolling A lemon Produce More juice ?

Dearesy Lemonologists,

As a sheepy I of course luff lemon..out of all the yellow citrus fruits that look and taste and are called lemons...Lemons are my all time fave !!

I recently watched Rick Stein (http://en.wikipedia.org/wiki/Rick_Stein) cook something with a lemon and he vowed that when ewe roll a lemon thusly.....

.......that it will produce more juice when halved and squeezed !

Don't be fooled !!..it is a real lemon pretending to be a Satsuma !

So, what's the science behind rolling a lemon to get more juice from it ?

Ewe see, in the field of knowing stuff about fruits and their juices this morsel of knowledge is missing from my database and I need to know !

Maybe he was using a steam roller. I'm sure that would do it.
