The contents of your stomach could probably say something about your last meal.
Your liver would say something about your time in the local pub [;D]
Not really an organ, but your hair will say a fair about about your recent nutrition and drug habits (except, if I recollect, you have a shaved head).

Your diary will do it.

Is it your brain? If you could plug that into a brain docking station then they might get your pin number.

I don't think there is one organ.. they could make lots of assumptions based on the damage to your liver, say, but it would take the examination of all your organs to make up a picture. You are a jigsaw puzzle... one piece is just not enough.

I agree but think the one to provide quite a lot would be the liver also. Agreeing that a fuller picture could be had using all of your organs but you specified which one would provide the most.. I think the liver, then the heart!

Your skin probably gives some clues to how you've lived your life, especially over a certain age....!
