Title: What's the difference in White Chocolate and Dark Chocolate? Which do you like?
Post by: Karen W. on 14/12/2007 21:06:44
Well For some reason I feel the flavor is different and

I can't stand white chocolate.. Is this all in my head???

Is there really a difference? Are they processed

different or do they have varied ingredients?

White chocolate seems sweeter to me.  I like it, but in very very very small doses.  Melted over pretzels is really good.  Actually, I like it better with something salty like pretzles and peanuts.

The difference is cocoa solids.
To make chocolate, you take cocoa beans and squeeze them hard - this makes them separate into cocoa solids (brown, bitter, psychoactive, probably good for you stuff) and cocoa butter (fat, just fat. kinda cocoa bean lard).  To make dark chocolate, you then mix the 2 back up with loads of sugar.  To make milk chocolate you mix the two back up with milk and, you guessed it, loads of sugar. To make white chocolate, you mix cocoa butter (lard, remember) with sugar.

So dark chocolate is good, white chocolate is sugar and lard.

Personally, i prefer the really dark stuff (70% cocoa solids+).  It's bitter, but somehow more satisfying.

Isn't the hard stuff (70% cocoa solids+)  medicinal too ?

Yep I like the milk chocolate better. some dark is ok, but I prefer the milk chocolate.. and I love the Rasberry Chocolate it is delicious.. I have not tried the others but have eaten a nutty banana and the chocolate and banana go well together!

White chocolate is way to sweet!

Not really fair - lard is animal fat, while you would be hard put to find any animal fat in white chocolate.

Cocoa is a vegetable, so the butter from cocoa (cocoa butter) is clearly also of vegetable origins (i.e. it came from the vegetable cocoa).
