Title: Why is My Meat & Two Veg Soft ?

LOL..

I have just prepared the most wonderful Chicken, potatoes, celery, carrots, onion soup /stew type thing (Ok..that's more than two vegetables ok?)...two hours of slow cooking joy has released every bit of flavour from those ingredients and I have to say it's well delish !!

But what has happened to my ingredients which are so unbelievably soft now ?..where has all their stiffiness gone ?

A bowl of health for each and every answer ...

By the way, you should have written.. "My sausage and two meatballs" or "My sausage and two brussel sprouts" [;D]

Anyway, I can't really help with cooking! Sorry [;D]

Yes, I rather thought as Sean did - a little double entendre.

The point about cooking is the you have gone and destroyed all of those stiff proteins, so they have all gone limp on you.

well..yes...I suppose you could say there was a double entendre....!!..I am so sweet and innocent..naive and vulnerable that I didn't notice it  !!

So, if the proteins are responsible or the stiffness...where have they gone ?......the only thing that was evaporating was the water in the stock ?..aren't the proteins still there somewhere ?

You have not lost the proteins, you have just lost their shape - they will have unfolded themselves, maybe lost some of their linkages, etc.

It is like you have knocked down a model made of Lego bricks - the bricks are still there, but you have lost the structure they had created.

Thank you for helping me to understand George.....one more thing though...Unlike the lego..I gather it's not possible to re-structure the proteins into their original folded state ?

Any clumsy oaf can knock down a Lego model, but it takes skill to put it back the way it was [:)]

The cell spent lots of time and effort putting those proteins just the way it wanted them, and then some clumsy oaf drops the whole lot in boiling water, and ruins the lot.

An oaf , with training,  may be able to put the lego back...so do you mean that the protein collapse is indeed reversible ?

If you had the right enzymes, it might be possible - not sure - but the cell, when it was alive would have had those enzymes, but I doubt it would be possible to do it otherwise.  They need precision folding - not something a big fat human finger can do.

Even if you could find an enzyme to fold one protein into the right shape, you need another enzyme to put it together with the next protein, and a full toolset of enzymes.  This is what a living cell spends its life doing - but the cells you have in your boiled meat are no longer living.
