Dearest Clever Peeps,
I need to know if it's Ok to store eggs in the fridge !..I mean there is an egg holder put there especially for the chicken orientated , thin-shelled reproductive oval shaped ovums of eggy delight goodness !!..
...BUT...I have heard conflicting reports that eggs should NOT be stored in the fridge...
...after all they are not stored in the fridge in the shop so why put them into cold storage ?
Can someone explain the science behind what happens when an egg is ' egg'sulated in a fridge and confirm if they should or should not be kept there.
An omelette to the person who satiates my eggquiry ! [:)]

Eggs should always be refridgerated, however, the yolk on a cold egg is firmer, so if you are eating your eggs (frying etc.) crack them while cold, but if you are baking with them let them get to room temperature. That way the egg can be broken down easier in the batter or whatever you are using it for.

That is the perfect advice I need. I will continue to refrigerate them. Fortunately, they fry well as indictaed by your advice. Will definitely remember to let them reach room temperature for baking .

I believe eggs *are* stored cold in the warehouses, sometimes for quite long periods (I think even months).
You can get away with not keeping eggs in the fridge (as in the supermarkets) for a bit, but they'll go off quicker. Eggs go off because bacteria are growing inside them, so keeping them cool will prevent the bacteria from growing (well, slow it down) just as it does for milk and meat.

Now that you explain it, it all seems totally logical to keep them in the fridge....presumably you can not freeze them ?
Ok...so that's a cheese omelette for Meg.....and...well..I think Rosy would like a Spanish omelette...or perhaps a delicate light and fluffy herby one !!

We raised chickens and you must refriderate them. They have a very long shelf life, but you should never crack one into your mixture, always crack them in separate dish before adding to your food, as you might get one that has already begun to go south or even have a developing chick inside, thats abit unnerving, but it happens! YUCK!

Yes, after we butchered them, They had no necks left to display my knitting skills, But one might use the scarves to finnish off the other chikens rather then a chopping block!! Less Mess you know!! LOL
