As I understand, after the Big Bang there were nearly-equal amounts of matter and antimatter, which promptly annihilated and left the matter that we live in and are made of. What happened to the enormous amount of energy liberated when the initial matter and antimatter annihilated?

Possibly but you must remember that at the sorts of energies we are talking about at that time period the annihilation of matter and antimatter could create a load more matter and antimatter as the high energy photons interacted with other matter particles so the heavier high energy annihilation s could have recycles a few times before only energy as photons and neutrinos were left
