Title: Why are Green Apples Crunchier Than Red Ones ! ?

I'm an OK Apple person...I should eat more but I don't

I often find green ones more 'tart ' than red ones so, why are green more tart and crispy ?

What is the difference in not just the skin but the flesh too ?

I also find green apples crunchier and more tart than red ones.
In fact I prefer them straight from the bottom of the fridge so they're as hard as cricket balls and taste like an acid sweet on your tongue.
Granny Smith's apples. Oh yes indeed.

No idea why they're more tart.
Possibly down to the acid content ?

Thats a good question and I can't answer it either!  I too prefer the Green ones for thier nice crisp tart flavor. I have some like a zesta apple that are wonderful also. Kinda green red striped very large apples. The tree did poorly this year, lots of apples, but they did not get a large as usual, actually they were pretty small in comparison! I also like big juicy crisp Macintosh they are delicious!

Karen Mam....ewe know !!..we could have discussed ewe having a whole plantation of apple trees half an hour ago and I have since ' lost the plot ' LOL.....

No spice needed !..why ruin the taste of beautiful apple with some Devils Dandruff !! ?...perhaps some brown sugar to caramelize the slices first before baking them in a  pie would be nice.

Thanks.....Oh...don't make it larger than twelve inches wide and four inches deep...else it won't fit through my letterbox..thanks Mam, If you bake it NOW and send it tomorrow..I should receive it by Friday.... [;)]

It is  funny movie! I like chevy Chase It was good to bring smiles.. WAtch it!

Sir I have to Barbeque it as my oven is still broken.. The holidays are upon me and money being spent for other things, LOL Your pie may be delayed indefinetly!!! That or it may smell a bit like wood smoke from the barbeque! LOL LOL

I intend to intrude on your jocularity. Back to the original question. It is just a matter of hunman intervention - horticulture if you will. Green appels are immature apples. Those species of appels developed for human consumption have been developed to be not quite as tart nor, shall we say, purgative, as an immiture red apple which can cause a bad stomach ache an a visit to the privy.

something like that. Also throw in selecting and cross-breeding the trees with the apples closest to the ideal you are looking to produce, the same way you breed horses, dogs, pigs, etc.

I spent two years cross breeding Lilies in a lab setting.. It was interesting I know a limited amount about apple grafting and such but find it quite interesting as to how they pick out certain characteristics of one apple and get others from another type apple. It is complicated! There is a lot of background involved in picking good matches I would think! I am sure like some flowers certain ones are stronger and have stronger traits much like varieties of apples!

Yes, it takes time and intelligence, BUT the old farmers who developed the different brand of apples probably could barely read. The Granny Smith, for example, was a hybrid developed in 1868 by accident.

Give them ol' timers a lill' credit!

That is cool, That's probably a good idea! I have a pretty good line on my family history way back and they were farmers also, but they were also educated very intelligent farmers. Many were struggling dirt poor farmers out of necessity more then anything!

I had heard that too Jimbob!  Also, Mustard is the only thing so far that is not hybridable.

Neilsy, do you like nutmeg?  (preferrable substitute for those who don't like cinnamon...also, Karen, if you make an apple pie with brown sugar, melt some butter with the apple filling if you make it by scratch with your apples, if not, canned apples are fine with mixing brown sugar and butter together... :-)

I have never in my life used canned apples, I would not know what to do woth it! But must try the butter with the brown sugar as that is a good combo!! He hate s nutmeg to as I recall , What kind of pewtrid name did you call the nutmeg Neil??? LOL ALLspice cinnamon nutmeg cloves etc. LOL

I dont believe that the colour has anything to do with it, I assume the green breed you eat is a Granny Smith which are pretty much the most tart (tartest?) apples available on a widespread basis. However I find a Jonathan (red) apple to be very tart (almost comparable to the Granny Smith) and a Crispin or a Gala apple (both greeny in colour) to be very sweet.

Repeating, its a specific breed thing, probably due to the amount of pectin found in the type of apple (Jonathan have one of the highest concentrations, or so the sheet on apples at my gym says). Well enough of my rambling, I'm going to answer that the tartness of an apple, has little to do with colour and more to do with Pectin levels.

Oh and by the way, the only reason I know this stuff is cause the area that I grew up in is kinda famous for its orchards, and most of my friends growing up (well those with money) all had farms with orchards, so I've been growing/picking/eating/baking apples for a long while now. And my grandmother makes an excellent apple pie (her rule - only use spys [hint:spy rhymes with pie] as they dont get mushy and they retain their flavour when cooked.

I like a variety but prefer them crisp and cold off the tree right after the first frost! MMMMM so sweet! But mine are late October apples I have one tiny red apple tree , but I don't like the apples, the are small mealy and soft!

Some green apples do seem very mild to me.
Most of them, apart from Granny Smith's of course, seem to be soft and powdery inside. The texture does not feel good when I bite into them.

I'd love to try one straight from a frosty tree !

You have never had a apple off from a frost covered tree..... OH my goodness.. They crunch and are filled with sugar veins They are heavenly... My tree is a late october fruit! I pick them after the first frost.. sometimes the second.. They are wonderfull then. Cold crackling crisp and wonderfully sweet not tart at all!! YUMMMMMMMM!

As a firm believer in empirical study I uprooted my Apple tree and took it to my supermarkets freezer section and whacked the beast in a pack of frozen peas and then picked an apple.

CONCLUSION: Nice Apple and a kick up the arse from security and a painful violation done to me with my tree !!..OUCH !!..Can't sit down !!!

You are such a dork!! LOL LOL First and second frosts usually are not that hard of a freeze.. The apples are delicios if you harvest them at that point!  I guess you won't be reaping the bounty of your labors this year... when you finally remove that trree from thr garage it was parked in you might consider a sunny bright spot for  replanting lovely Apple tree. Remember trees don't do well where the sun don't shine! LOL LOL

Well, I think there is a similar practise in winemaking, well known in Germany.  Some white grapes are left on the branches, and picked only after the first frost.  Apparently this gives an extra sugar content, but has a positive effect on other flavours too of the wine.  The name they give it in German is "Eiswein".

Its certainly the truth with my apples. They get these marbled like sugar trails that are actually visible after picking after 1rst or 2nd frost.. I judge by apple size if I wait to pick.. not to long as you don't want them on too long!

Family ...shudder...LOL I am horrible as my sister gave me a year old calendar and a puzzle..but I did like the pictures...puzzles are so amusing...but, alas, I have figured it out  already...she picked it up from our Science fair we had mixing metals and twisting them back and forth until the metals  are in the right order...steel, aluminum, brass...etc..what did Santa bring you?

No worries Loretta I love the scrinch!

Well lets see, My son  and Robert gave me two throw pillows Cheetah print and a matching duvet cover... Which I love, But will only see during my wake hrs, as they bought it for *our* bed, which is being used these days in shifts! LOL

My Friend Mary gave me a beautiful necklace!! Daughter gave me  chicken candle holder and socks and shirt, All Christmasy like. She gave them to me a couple weeks back so I could wear them to school to amuse the children!! LOL I recieved a Chicken statue from "My Mother in law" Despite her feelings :) My Niece gave us a couple of theater tickets and dinner out to an Italian resturant we like!! That was very nice as we both like to eat out.. The movies I love also, but he never wants to go with me so, we can go separately..

It was a nice morning followed by empty house syndrome, which is good, but not on christmas.. It's the pits!!


BTW Robert still came home Christmas eve with my  rose and christmas ornament! Only this year he brought two ornaments and instead of a  sigle Red Rose he brought a SINGLE RED and a SINGLE Yellow ROSE Together!!OH loretta.. the card still said, "I LOVE YOU!" MAde me cry, not because I still love him, I do as a friend, but because despite what I have told him and he says he understands, I think he doesn't! The flowers and ornaments are very nice as I do love flowers..So I am just going to put it off to a friendly geture, maybe thats why The yellow rose! I don't know.. I didn't have the heart to ask any further...

Oh, wow....still, sad.  You guys have a lot of time vested. I think it is wonderful he bought you 2 roses...yes, yellow symbolizes friendship...that is sweet, but then there is the card.

A chicken statue?  LOL  How funny. 

I think I like being out of a relationship even more...geez...no such thing as true love to me.  Scrinchy again...sorry  LOL

OH loretta, Thank you so much.. I did not know what the yellow rose meant..This has made me feel better just reading your post!! You don't even know!! Know I understand his card too. He is talking about our relationship now.. that must be it!! Gosh.. I thought things were going backwards again... whOOOEEE!!

By the way,I like them when they are stationary and not jumping around with their heads cut off!! or hurting people, ie, the mean rooster! LOL I have a whole collection of chicken statues!

Oh GAWWWD.... You are hopeless, I love true love and cling to it everyday I wake still able to breathe and believe!!

I am a realist...sorry, true love is as much as you make it..people holding true to what is important to them, sometimes the emotional side can have you going like a roller coaster

Yes It was sweet, but I must admit it threw me for a loop for a while..!!!

As far as what I got him, I bought him a couple really cool super powerful ferric, permanent magnets, odd shaped UFO magnets and a cool solar racer, little matchbox size car that is solar powered!

The magnets are about 2 inches in length and shaped like bullets, only both ends are rounded like the tip of a bullet! You are supposed to throw them into the air seperately, but not to far apart... then they come together and their magnetic field attract, causing them to vibrate against each other and make a strange noise like the sound of a UFO...LOL what ever a UFO is supposed to sound like!!LOL LOL... You can put one on the back of your hand and the other on the inside of your hand and shake them and it holds together even through your hand.. they don't fall! Very cool!!

 The solar racer is just that...put it in the sun and let go!!!! ZOOOOOOM!!

 We have a appointment at the Bicycle shop for the rest of his Christmas, As I gave him 100.00 dollar gift certificate at the bicycle shop... He wants some things there that I could not pick, because I am clueless about stuff like that!!

I tried my best to behave myself and keep a smile while around the family... especially at Grandmas.. I think I did an outstanding job considering!!

I promise there will be no deep fried Chicken statues Sir...LOL unless that little sucker decides to let loose and breath... Then heaven help him.. I will call you for dinner!!!! LOL

What pray tell did you get for Christmas Sir Neil?? Was It something fun???? LOL Battery powered perhaps, We always do toys in the stockings as we are still childlike here.. I must say That my stocking is always empty as know one ever knows what to put in Moms stocking, so I always put an orange in it!! This year I put a bag of cashews an orange, LOL and I bought My self a small wind up music Box that plays "when you wish upon a star!" ITS really hand crank, not wind up! about 2 inches long.. tiny thing see through so I can see the workings! It made me feel better to hear that tune... I liked it! LOL
