Title: What causes diarrhoea in a Maine Coon?

I recently adopted a female Maine Coon, who is estimated
to be a little over a year old.  She has diarrhea, and it's become a
problem because the odor is intolerable.  Any simple recommendations?
Should I withhold all canned food from her?  Put her on a strict diet
of dry food?  Does this situation qualify a veterinary visit?

I know nothing about Maine Coons but if an animal is suffering severe diarrhea then yes, get the critter to a vet. Could be an tummy bug , clearly she's not a happy...erhhm...thing !

They often suggest rice for dogs etc.. but a coon? I am not sure.. I would certainly call the vet!

Main Coon is a cat.

A visit to a vet is still a good idea.

Or does she still drinks milk? If so, stop giving it to her. Lactose may give diarrhea to adult cats.
