I am researching old quarries and their effects on surface and groundwater and/or water tables. Anyone have a good starting point or research paper to look into?

Not me - I would go to the library and see what you can do on the library search. There are specialized geologic databases that you can access in the right libraries. Start search with "quarry envoirnmental." Using the singular will bring up more results.
