The SKIN of Milk !
« on: 30/12/2007 17:15:19 »
Dear All,

I luff milk...it's my all time favourite cow juice !

Here's some....enjoy !!

But, if I were to heat it....it manifests a skin !!

Is this skin akin to the skin on custard ?...but what is this skin ?...if left...will all the milk become skin like ?...why does it make a skin ?

Thanks

neilxxxx

Neil the reason for the skin on your hot or warm milk is the fat that rises
to the surface from it. Depending on what sort of milk you are using
Full cream, skimmed, semi-skimmed or homogenised.
