When dealing with engines, terms such as horsepower are used. But what does horsepower mean?

One Horsepower is 550 ft pounds per second; that's how it was originally defined.
In modern terms, 1hp is about 760W - same as a decent electric drill, for instance.
One actual horse can produce much more power than 1hp, in fact, a fit 16 year old boy can manage about 1kW when running up stairs for a short time. However, when you are selling steam engines to farmers and factory owners you are going to give them optimistic figures for your new invention. BUT, bearing in mind that an engine can run all day without a rest, the figure is a better comparison of achievable work than it is at first sight.

That was not my question, it was a link to a topic where Neil asked the question, but the answers ofcourse included comments pertinent to this question.

Hmm - I never thought of it that way but it's a good comparison. More meaningful these days.

.. or maybe one can explain it to 'the boys' this way
