How is ethanol produced in the laboratory?

Im doing some research into the production of ethanol from biofuel crops such as corn or sugar cane for my Extended Essay and how to reduce the amount needed for a decent yeild. I don't know much about the methods of production and i was wondering if anyone could help explain a laboratory procedure for creating ethanol from these crops.

Corn will be similar to barley so you will have to go through a malting process first I would imagine.
