I am looking for something that may be mostly Barley and vegetables...perhaps small amounts of chicken etc..

Something good Hearty.... I love Barley....I would like to be able to use it for a side dish to..I like strong sesonings and numerous spices so something ..different would be fun......

I need a change!

I can vouch for this, Karen. I made some using the recipe on the Wiki page-link provided. It makes a LOT off stuff food so cut it in half if you are the only one eating it. It will still last a week or more.

Thank you RD..The recipe is wonderful... I hapen to Love sctch broth but have never known how to make it....I knew barley lamb and carrots were ib it but nothing else.... Sounds Delishous!

Thank you Jim..I will remember that! Lol...I don't want to eat it all week straight..Lol...

homemade egg noodles boiled up in scotch broth..is heavenly!!!

This is a barley-mushroom pilaf I used to do years ago from the Whole Earth Cookbook - it is v good.

half lb mushrooms, diced
1 tablespoon fresh chopped parsley
1 small onion, diced
1 lb barley
6 tablespoons oil
one and a half pints chicken stock
salt and pepper
1 bay leaf


Saute mushrooms, parsley, onion, and barley in oil. Put into 3 pint casserole with broth and seasoning and cover. Bake at 350oF, gas 4, for 45 mins, or until barley is tender and liquid is absorbed. Serves 4 - 6.

Note: these are imperial volumes, you may have to adjust a bit.

It sounds very good.....

I was wondering also if anyone knows the nutritional value of Barley ? You know..calories, fat, cholesterol etc...what kind of vitamins etc..

Water, malt, barley, hops, brewer's yeast and finings (isinglass made from fishes' air bladders).

Resulting liquid meal contains 198 kcal (838 kilojoules) per imperial pint (1460 kJ/l).

Barley is:

Total carbohydrate 73%
Protein 12%
Fat 2%
No vitamin A or C
High in Iron and some Calcium
No cholesterol

350 cals per 100g - before cooking. I think this is about right for one serving, like you'd have about that amount of dried pasta (or I would). [:0]
