Space Veggies and Vitamins

In a recent episode during Science Fact or Fiction, mention was made about high vitamin yield vegetables generated in space.  I found the wording of the answer curious.  It made it sound like space radiation mutates seeds to produce giant vegetables.  It further sounded like the claim was that a giant veggie had more vitamins.  It was unclear if there were more vitamins because the veggies were bigger or because the concentration is higher?  Do I get twice the vitamins from eating half the volume of veggies?

I don't think I heard that question and I certainly don't know the answer.

Have you listened to the podcast of the episode to make sure you understood the explanation correctly? You could also check the transcript.

However, this quote from that site

is still somewhat ambiguous.

There were, according to Google, "about 347" results returned for the search criteria ("space" or "low gravity") and "vitamin" and "vegetable"
To be perfectly honest, I can't be bothered to wade through them at 4:04am :(

Because numerologically 404=time for bed!
However, as I got up again at 6 and am now looking for some light relief from working on my website, I may well wade :)

I'm OK with the psychology side of it, but it's hard work trying to figure out what all the technical stuff on the genetics websites means
