Author Topic: Why does vanilla essence taste different in water than in milk?  (Read 3700 times)

Mike Berry  asked the Naked Scientists:

If you take a bottle of vanilla essence and sniff it then it smells characteristically like vanilla.

If you place a few drops of the essence into milk and taste it, it tastes  like vanilla still, Sweeten it and it tastes closer to the ‘vanilla smell'
However if you place a few drops in water (and it doesn't seem to matter if you sweeten it or not) it tastes extremely bitter.
I figured that maybe it was the presence of fatty substances in the milk or something but I am not sure.

What do you think?

Vanilla essence is man made and is more concentrated than vanilla extract. Prolly why.
