Pectin and lime = sugar+calcium?

Pectin and lime = sugar + calcium.

Does anyone know if any other chemical (ie copper sulphate) can be added to stop the sugar being formed or to remove it after it has formed. The reaction is taking place in a lime-hemp biocomposite and the sugar is acting as a set retarder so I am hoping to remove it somehow.
