How does euphorbia sap produce skin blisters?

I have a plant called a euphorbia and when you break a bit off, there is a bright white sap stuff comes out. If you leave a bit on youre skin, the next day, you will have a quite painfull blister.

This is obviously the plants defence (and a good one at that), but does anyone know more about it.

No I don't but, why did you call your plant euphorbia?
