Why would oil act like this while boiling pasta?

Hi,

When cooking pasta last night, I added oil to the water to give a film floating on top of the water (that didn't fill the saucepan).

I got islands of water within the oil. As these migrated to the edge of the oil they disappeared (the thin strip of oil got thinner until it broke), and as they did so, seemed to eject an oil particle from the main body.

I wondered what was going on?
