You see lots of variation on other parts of the bodies brown patches in various places etc but never from my experience on the ears....

Any thoughts

Can't say as I've made a close study of Springer Spaniel's ears, but I'll take your word for it.

Come to think of it, I can't say as I've made a close study of any dog ears, but our local librarian gets annoyed by them.

I don't think there is anything going on hear (sorry), just one of those things. Look hard enough and I'm sure you'll find a white ear whoofer.
