why don't we see the breath?

I recently watched an episode of tribe on tv and the presenter was in Siberia living with a nomadic reindeer herding group.  A lot of the filming was outside in minus degree temps. but at no time did the breath of the people or reindeer show up on the film. Why not? Surely its temperature would have made it visible?

That is odd.  I never thought about it much.

The Arctic regions are supposed to have lower humidity than what one might otherwise expect.  Perhaps in a low humidity environment, water does not condense as much.
