Can bread melt?

Can bread melt, or what the heck is going on when I heat dry bread in the oven and it turns soft?

I think it can burn, but I don't think it can melt? Seems as if there still will be water in the bread even when stale, whose molecules starts to 'jingle' around as the microwaves gets to them, breaking up the molecular structure of the starch. Should be possible to test if you have some totally old bread, and compare it to just 'stale bread'.
