In the immediate post war period when food was in short supply I used to get turkey eggs that had proved infertile from a hatchery to eat they were OK.

My guess is that there are fewer turkey eggs produced, and the profit is in adult turkey meat rather than eggs.

Duck eggs are favoured by foodies, and can be as large as turkey eggs for a smaller investment in primary bird feed.

Modern breeds of hen-laying chickens have been optimised via selective breeding so a massive proportion of their food input gets turned into edible egg.
Far more efficient than cows turning grass into meat (although comparable with cows turning grass into milk).

I suspect that this same selective breeding has not occurred for turkeys.

PS: Turkeys didn't originate from Turkey!
