OK - we can get all different flavours of crisps (USA=chips) etc. but very few contain the actual ingredients they taste like. So how are these artificial flavour mixes discovered? Do the mixers just whack a load of flavourings together then see if it tastes like anything recognisable (or, like "slow roasted lamb with Moroccan spices", somewhat obscure) or is there a scientific process involved whereby the flavours are deliberately mixed to get the required taste?

There definalty is a huge science behind natural and artificial flavours. Both, by the way, are manufactured in labs. There is nothing natural about natural flavouring.

The scents and tastes of foods are due to the gases that are released when the food is agitated. There are machines that will distinguish and replicate these gases, giving them the flavour that can be transformed into an additive.

Really complex aromas, (roast meat, strawberry, coffee) can have hundereds or thousands of various chemicals to make up their flavour compounds.

The scientists that flavour our foods are also responsible for scenting perfumes, or hand lotion, it is all done by the same people. The same chemicals that make your deodarant smell the way it does, make your BigMac taste the way it does.
