one culinary "delight" my local fish and chip shop sells are deep fried mars bars. Whilst the notion of this is not tempting at all, i just wonder how come the chocolate does not melt?

If I recollect correctly, they fry it quickly enough that there is insufficient time for the heat to permeate very deeply into the mars bar.

They are dipped in a batter, then quickly fried so they get warm and kind of gooey... its impossible to explain you just need to try one!

There's no question in my mind that the taste is well worth the experience of feeling your major blood vessels fur up.
