adding milk to potatoes make them creamier, why?

Having just made the kids dinner, mash and stuff.

I notice that without adding milk the mash is less creamier and lumpy, why does adding milk make the mash sooo creamy and help remove lumps?

Pass, but I do know that using cauliflower also makes it creamier (and means that you can give the kids extra veg without them noticing ;))

Thats a good idea. Paul maybe because milk has a certain percentage of cream!

..........add butter too............and if you can ...pass it through a sieve !...but ewe know what ?..I luff lumps in my mash !!...it's just bits of potato !!...I find it unusual that if my family come across the odd lump that they reject it......yet ..take that lump out....magically turn it into a regular potato and they'll eat it.


The fact is...add milk, cream, butter  (try creme fraiche and chives)...it's just diluting the mixture by adding a liquid !


Incidentally, the kind of mash that you can buy that needs water adding to it makes an ideal soup thickener or stew thickener !!

Neil Add garlic to that and OH my gawwwwwwwwwwd! It is so good! YUMMMMMMM! don't forget a tad of fresh ground pepper........emmmm!
