Silver Foil- Which Way And Why ?

While I've been away............ I've been pondering about foil !!:D(like you do) Y'know the stuff you wrap your sarnies in, or perhaps some cheese.....err...anyway....should one have the shiny side inside or outside ?....this is a very important topic which I imagine should generate quite a heated debate (Sarcy Mode) [:o)]....but seriously, which side of foil should be inside ...and why ?...An educated guestimate leads me to submit that I think the shiny side should be on the inside.....but i don't know why..  (I just went and had a glance at my roll of foil and it said on the box that either side can be used...then WHY is there a shiny side and a dull side ? ta very much)


I posted the above question a few years ago but it was never resolved....to receive a fresh prespective I have reposted it.....cos...every time I use the foil to wrap something up I ALWAYS wonder which side and why ?

The shiny side will reflect more heat so if you have warm food, shiny side in. For cold food, shiny side out.

Because the difference would be so small that it would be hard to measure.

Also, the shiny side is a better reflector so its a worse radiator of heat so it makes some sense to use it as DrBeaver says from that point of view too.
I invite you to get 2 blocks of cheese, 2 thermometers and some foil and do the experiment. Remember to use food type thermometers so you can eat the cheese afterwards.

...if the difference is small then why have a dull and shiny side ?

I believe that its from the manufacturing process. The foil is squeezed out between two rollers but it's difficult to get the rollers close enough together to produce really thin foil. To get round this they run 2 pieces of foil through at the same time. The 2 outer faces come out smooth because they are in contact with the polished rollers. The 2 faces in contact with eachother are rough.
According to this
the doubling of the foil is to reduce breakages but the effect is the same.

My Mom always said to bake shiny side up to prevent items from burning. Shiny side in if you needed it to put in the refrigerator shiny side inside!

I have to say I always tend to put the shiny side inside.....
I make vain sandwiches that just luff to admire themselves before being consumed !!

I agree that the shiny side should be outside. The shiny surface would radiate less but the contact of the inside surface with the food would mean conductive heat transfer - which would dominate at the relatively low temperatures of cooked food and it wouldn't matter whether it was shiny or matte.
It's amazing that everyone says "It reflects the heat back in". If you actually feel the foil, it's quite warm, so it doesn't just reflect heat.
