how does a throwing knife get from the thrower to the target without the handle hitting the target

The blade is heavier than the handle. That causes it to go point-first through the air no matter whether you hold the handle or the blade when you throw it.

A lot of people think that the knife goes end-over-end through the air. Holding the knife by the blade when throwing it reinforces that idea as it has to revolve through 180o to get point first (it may spin through 540o once, but that's all).

OK then so as long as the blade is heavier than the handle i can throw it accurately

Accuracy takes practice. But you should be able to get it to go the right way.
