why does salad dressing not seperate?

If salad dressing is basically oil and vinegar (which is mainly water), why does it not seperate in the bottle????

The presence of an emulsifier.  In traditional formulations, that will be lecitin, a component of egg yolk.  Currently, there are a lot of substtutes.
