Is it safe to eat cake that's been frozen for 11 years?
« on: 27/09/2011 20:30:03 »
Janet Darling-Roden asked the Naked Scientists:

My friend and I found a cake in the freezer today.  The label on the cover of it had a date of August 08, 2000.  It smells and looks fine, if a bit dry.  Is it safe to eat something with preservatives that kept it from molding for this long?  Not that I want to, but I'm curious!

What do you think?

I'd eat it.

But, then again, I might eat some things that others wouldn't eat.

If it has been continuously frozen, then there would be little chance of decay.  Even chemical reactions would be inhibited at freezer temperatures.  Modern Frost-free freezers, however, will tend to dry out many substances though.

If in doubt, taste a little, then wait a few days before eating the rest.

I have eaten rich fruit cake that was almost that old that hadnt been frozen (top tier of a wedding cake eaten upon third child's christening about 7 years later)!  As long as it has proper royal icing and is regularly laced with brandy then it keeps marvellously - the icing becomes incredibly hard and discoloured, but chip it off and re-ice and it is ready to eat

So long as it hasn't been defrosted a few times, when defrosting the freezer, I see no reason not to scoff it.

DISCLAMER

The opinion above is the opinion of a greedy guts, who would eat the pattern off a plate, and should not be taken as an informed scientific estimation.

The Chinese have a delicacy known as the 1000 year old egg or Pidan. They are preserved duck eggs and in reality are rarely more than 100 days old.

They are coated in a mixture of red earth, lime, salt, and ash blended together with tea and stored in airtight containers in rice husks.

Unless it’s a fruitcake, most have a lot of fat eg sponge cake, which can go rancid and not taste nice.

Thanks Colin, I have let it thaw.
I purposely did not use a fruit cake as I know they last very well forever.
It's a slice of spongey cake with fruity jam stuff inside !
