Should all dead bodies that have an open coffin viewing at a funeral reception be embalmed?

They tend to stink if you don't apply some chemical treatment. But the whole business of staring at a dead body baffles me. My mum always said "Bring me flowers while I'm alive and get on with your life when I'm dead".
