This is a science forum. Please conduct the experiment and inform us of the outcome. As you have chosen readily-available and fairly cheap components of a normal diet, there will be no external funding for your research.

There are many types of cheese, with significant differences in nutritional components (fats, proteins, salt, calcium, live cultures, etc.) Does the diet include all types of cheese, or is it limited to only one variety (and if so, which?)?

A lot of flatulence, I would imagine. Probably reasonably healthy in the short run but b12 deficiency might be a problem after some time.( I didn't read the post posing the question properly--1 month would be fine, excepting the borborygmi)
