I've heard of it - quite a few people are interfacing it with the FlightGear open-sauce flight simulator to simulate Flight Data Models - but I've never seen or used it myself. I would imagine that there must be a few tutorials around on the web.

...And its claws are as big as cups, and for some reason it's got a tremendous fear of stamps! And Mrs Doyle was telling me it's got magnets on its tail, so if you're made out of metal it can attach itself to you! And instead of a mouth it's got four arses!

There is a huge amount of data on MatLab for a whole variety of applications. I didn't answer this earlier because I have not used it (I use SystemVu which has similar features dedicated more to the applications I need) and it is quite expensive unless you are a student or in an educational establishment. It is a very good and versatile tool.
If you do a lot of pure maths and need equation symbolic manipulation then take a look at Maple.
