Dearest Darlings,

*le yum*
I must post my recipe for caramelised onions !
Anyway, I just watched Nigella on the TV cooking some and she added some salt and she clearly said "add some salt to stop them from burning"
...why's that then ?...why does adding salt stop frying onions from burning ?...does salt stop lots of things from burning or is it a specific reaction only with onions...?
*I broke into my neighbours house, woke him from his slumber, dragged him outside, feather and tarred him then dressed him like a frenchie with a bunch of onions around his neck and asked him........ but all he could do was blubber ! *le merde*
So, can ewe help ?
Thanks

I'm not sure, maybe salt dissolves in the water contained in the onions and so it increases the water's boiling point, so water vaporizes slower, keeping the onion wet and preventing it from burning.

That would be my guess too.
