Per Charles C Mann in the book "1493" the potato is the one single food that could nourish a person indefinitely. I would love to hear your analysis of his statement.
Unfortunately I cannot easily quote it as I only have the Audio version of the book and have not got my act together to get to a library to find it in print. Sorry!
