Title: What can soil from archaeological digs tell us?

Excellent point about minerals, especially, that would be in soft tissues.  What about lead?  If one thinks as the body being a container around the bones, perhaps one could even look at other "nutrient" minerals such as zinc, or even sodium.  Nitrogen?

I would assume most protein and DNA from soft tissues would get recycled a few times, but what else is there?
