This is a barley-mushroom pilaf I used to do years ago from the Whole Earth Cookbook - it is v good.half lb mushrooms, diced1 tablespoon fresh chopped parsley1 small onion, diced1 lb barley6 tablespoons oilone and a half pints chicken stocksalt and pepper1 bay leafSaute mushrooms, parsley, onion, and barley in oil. Put into 3 pint casserole with broth and seasoning and cover. Bake at 350oF, gas 4, for 45 mins, or until barley is tender and liquid is absorbed. Serves 4 - 6.Note: these are imperial volumes, you may have to adjust a bit.
