Here it is explained how we sense temperature.
But this is wrong.
We dont sense temperature, we sense heat transfer.
Here some explanation from Veritasium :

The Article mentions Sensing of Temperature Differences through our Nerve endings and how it is processed inside of the Brain.
It wasn't making a point on Heat Dissipation or Conduction.

We sense temperature, and heat-sensitive neurones fire at a rate proportionate to the temperature, notwithstanding effects of adaptation / accommodation.

Of course we sense temperature this is the scope of the nerves after all

If all of your outer skin is dead you cannot feel temperature anyway. But I do agree, you can touch something very hot very briefly and not feel it.

The outer layers of skin is composed of dead cells.
