How does Google mic work how it tell people voice in to alphanumeric and numeric character

Today, voice recognition (as in Google, Siri, Alexa, Cortana, etc) is still a bit too processor-hungry for smartphones, TVs and Barby dolls.
Instead, the device is able to detect an "alerting phrase", and then capture the following sounds, and send them to a server farm which has specialized hardware, software and databases for speech recognition.
Once the speech is converted to text, Google-style search algorithms take over to find suitable answers. Speech synthesis turns these answers back into sound.
