Title: Have you Ever deep fried a turkey?
Post by: Karen W. on 20/11/2006 16:50:15
HElP! I want to deep fry my turkey for the Holiday, does anyone have any tips for deep frying a whole turkey? He is a 22Lb turkey, if this helps!

People do it all the time here in Alabama.
From what I've heard, do this outside on you driveway, with an appropriate fire extinguisher nearby. And think through how you're going to get the turkey OUT of the hot oil before you begin.

I was assuming that the deep fryer I pick up will have a basket to raise the turkey out with.. Am I under the wrong assumption? I have the fire extinguisher! Carport should do, its open and metal! CAn You stuff the turkey, or does deepfrying it illiminate that posibility?

Make sure the turkey isn't frozen, I saw a mythbusters thing which caused the oil to froth everywhere... I guess there was ice in the turkey which melted then boiled. On that general note, make sure the turkey is dry - as the water could boil violently throwing oil everywhere... and I would be very wary about being nearby when you put it in, just in case.

I have consulted with a local expert on the subject. Dave's right - start with a dry, completely thawed bird. Pre-dip the bird in cold oil away from the fire beforehand to test the level of the oil - you want to cover the bird, but the vessel should be no more than 2/3 full. Oil overflow is another common way to start a fire. Lots of folks inject brine/oil/seasoning mixtures into the meat before it gets fried. Heat the oil (usually peanut oil, but then again, they grow peanuts around here) to 350 F, making sure that the oil level will not rise too high for the vessel once the bird is added. Fry 3 min per pound. And then 5 min more. My expert suggests that you turn off the flame before using tongs to remove the turkey basket from the oil. And have another person there also with tongs (or those silicone potholder gloves), to help if you. Or to use that fire extinguisher.
Bon appetit, y'all!

Hey Igic, can I use a different kind of oil? I am a tad allergic to peanut ts, not deathly, but would rather not itch to much!

I'm sure you can, just make it sure you use something that won't smoke at 350 F.
