I pickled some eggs in old pickled onion vinegar once and they were fine.  They were a bit brown, and I'd also chucked in lots of curry powder too...

Hi, my mother always told me to take a few sips of pickle vinager when I have a sore throat, seems to work a treat. especialy if you gargle with the stronger variety. you could do this with your old vinager instead. Or its great for cleaning the windows if you put i on newspaper it reacts with the paper and takes all the dirt off easily.

While we are stating the obvious, as the vinegar soaks into the pickle, the water from the cucumber leaches out into the vinegar and dilutes it. If you reuse it often enough it won't be acid enough to kill bacteria.
Just a thought.

Excellent point ! Thank You Bored Chemist

But will the water eventually evaporate away leaving a concentrated vinegar solution ? If I left the lid off ?

hmmmm............I bet you're going to tell me that vinegar evaporates more so than water now !! [:)]
