This is not...but it is called a Lemon Sole :

Previously I have asked if at some point the two components of my question have ' got it together'...I think in this case it is prudent to not ask this.

But...there must be a reason why the Lemon Sole is called a Lemon Sole !!...any ideas ?

Sole appears to have a common root with soil - referring to anything flat (e.g. the flat part of the feet, or a sandal worn on the feet, or the soil, or a flat fish).

Haven't found any better explanation as yet.  Lemon seems not to have many variations in its meaning (except that is is linked to 'lime' - but both are related fruits), so there seems as yet no obvious alternative explanation, except its appearance.

Interestingly, looking at Wikipedia, it seems the lemon sole is not even (in biological terms) in the family or true soles (etymologically, it is a flat fish, but it lives amongst rocks rather than on the flat bottom, and so it has not moved both its eyes to the right side of its head, as is common with true bottom dwelling soles).

http://en.wikipedia.org/wiki/Soleidae
Quote
The true soles are a family, Soleidae, of flatfishes, and include species that live in salt water and fresh water. They are bottom-dwelling fishes feeding on small crustaceans and other invertebrates. Other flatfishes are also known as soles.

Soles begin life as bilaterally symmetric larvae, with an eye on each side of the head. But during development the left eye moves around onto the right side of the head. Adult soles lie on their left (blind) side on the sea floor, often covered in mud which, in combination with their dark colours, makes them hard to spot.

Soles (along with flounders) were observed by the Bathyscaphe Trieste at the bottom of the Mariana Trench at a depth of 35,798 feet (10,911 m).

Many soles are important food species: the common sole, Solea solea, is popular in northern Europe and the Mediterranean.

Thank Ewe George.....but the more I look at the lemon and then the sole with it's snout...the more I am convinced that that is why it's called a lemon sole.

Grab a lemon sole..paint it yellow....hang it in a tree and you have a very tempting flapping wet fruit for making lemon tea.

It's to do with motor racing. These fish are fanatical sports car drivers and regularly compete in 24 hour endurance races. Their favourite race is, of course, the Le Mans 24 hr. Lemon is a mispronunciation of Le Mans... FACT!  [:D]
