This evening I made my first ever Lancashire Hotpot (http://www.bbc.co.uk/food/recipes/database/traditionallancashir_70908.shtml)and i have to say, it was FANTASTIC !
In addition to the lamb I added sausages and bacon and it was well delish !!
What did ewe have for supper ?

It's not supper time here yet, but last night I had a steamed tuna steak with roasted broccoli and spring salad. Tonight I'm thinking it may be grilled chicken breast, salad and sauteed squash and zucchini.

A good tip is to place the chicken/meat joint on top of two onions halved !..it raises it off the pan, gives it a lovely flavour and oh my !..the onions caramelise into a fantastic gooey mess that then serves to make the most amazing gravy !

Carbonara, made with local smoked black forest ham, and parmigiano reggiano that I brought back from Italy. A moment on the lips, a lifetime on the hips....but worth it!

A new day a new meal. Tonight I had duck leg in tomato and fennel sauce with a baked potato. I love fennel and tomato with garlic and onion, white wine and a bay leaf. I bought beefsteak tomatoes from the farmers market. They are grown on the Isle of Wight.

Karen, OXO cubes are stock cubes made for beef, chicken, lamb or vegetable foods. Not bouillon/fish ones though.
I checked to see if you might be able to purchase them in the States but they are not made there but only in the UK & South Africa. No I don't know why.

Thanks Rosalind.... Although kisses and hugs would be fun whilst preparing dinner, except dinner may be rather late if not skipped altogether!!!!

Butler was lax this evening and didn't have cook do it correctly so I ended up having a rather shorter than normal dinner. I had a bit of caviar to start with followed by a half dozen escargot. Only a thin soup tonight - dark onion with a hint of garlic. I never miss the fish so I enjoyed a serving of lightly curried scallops. A bit of Italian pomegranate sorbet cleansed the pallet for the nicely turned quail with shallots and artichoke hearts that followed. I must say the tenderloin medallions in the wild mushroom sauce were excellence. A spring mix of greens with a sweet yellow pepper cartwheel made a delightful intermezzo. Then, a nicely ripe Gorgonzola preceded the trusty old spotted dog, which in turn was followed immediately by a double cream hand-made ice cream for which one of the servants had crushed the vanilla beans by hand and extracted the flavor with a unflavored doubly distilled liqueur. I then elected to have the cantaloupe with the almond and mint petite four. Retreating to the drawing room, I opted for a cup of the blend of coffee I grow myself in the solarium.
I topped it all off with a large can of Foster's and a some skinny dipping in the cement pond with the maid. Sometime life can be so boring. SO - I turned on the TV and watched on demand professional wrestling. The maid "had a headache from too much Foster's." Likely, I'm sure.

Karen that's fine but I am sure that there are an American equivalent
of OXO stock cubes or why not just make your own stock with the
water/juices from the vegetables that you use.
Also the juices from fish and/or meat too.
Either use it now or freeze in ice cubes for the future,

I was late home after setting up the Biometrics exhibition & conference at the QE2 conference centre in Westminster so I had a take-away kebab cut from the turd on a roundabout.

Not eaten much for a few days as I have a heavy cold so I'm keeping up the fluids and salt.
That's pretty much the diet I'm on, except I'm not having salt, nor the stock cube.....just hot water !! *le sigh*..

That's better...completely destroy some beautiful scallops by currying them...I give up !! A bit of Italian pomegranate sorbet cleansed the pallet Adequate for the nicely turned quail with shallots and artichoke hearts that followed. Improvement, I'm almost impressed !! I must say the tenderloin medallions in the wild mushroom sauce were excellence. Now ya talkin !! A spring mix of greens with a sweet yellow pepper cartwheel made a delightful intermezzo. Bon, tres nice !!Then, a nicely ripe Gorgonzola preceded the trusty old spotted dog, Acceptable, ...Roquefort is the real deal though !! which in turn was followed immediately by a double cream hand-made ice cream for which one of the servants had crushed the vanilla beans by hand and extracted the flavor with a unflavored doubly distilled liqueur. Was a medium potato rubbed with Olive oil and Rosemary....garlic... and baked until done...then I added small amount of margarine.... low fat sour cream and sunflower seeds.....I love sunflower seeds..... Yummmmm!!!. I like my potato skin well done..... ummmm!

It could have been locally (black forest) smoked Norwegian Blue parrot - I was implying that the meat also comes from the BF [:)]
The cheese - there is no problem moving (most) stuff around as Germany and Italy (and soon Switzerland) are part of the Schengen Agreement. It's similar to buying say, lamb in Wales and then driving it to England....

An Apple, And a thin crusted homemade sort of low cal pizza small amount cheese and some lovely red and green bell peppers and mushrooms with some lovely homemade red sauce with Garlic.. Single portion...! serving.. or slice what ever you want to call it and a diet sierra mist free lemon lime soda! Two large glasses of water to top off my daily quota!

Switzerland can't be part of the Schengen agreement because it's not one of the EU countries although it's one of the older European countries (historically).

Heres a recipe for one of last weeks main course dinners .. Yummmmmmmy! One of me favorites.. try it it is delicious!
Chicken Rolls Kiev
3 Whole Chicken breasts, skinned, boned, halved
Juice from ½ lemon
Salt
2 Tablespoons butter
½ Cup flour
1 egg, beaten with 1 Tablespoon of Water
1 Cup dry fine Italian seasoned bread crumbs
Oil, for Deep Frying
Sour Cream, for garnish
Paprika for garnish
Finely chopped Green Onions also for garnish, (optional)
Pound each half chicken breast very thin between 2 sheets of wax paper. Sprinkle with Lemon juice and salt. Place a teaspoon of butter on each, and roll each up tightly closing ends on beginning part to enclose butter in side. Make sure sides are tucked in well to encase the butter completely. Roll in flour, then in egg beaten with water, then in Bread Crumbs. Press crumbs into meat so that each roll is completely coated. Refrigerate until chilled. Pour oil into wok to a 3inch depth. Heat oil to 375 degrees F. or (191 Degrees C) or until a one inch cube of bread dropped into oil browns in about 60 seconds. With tongs, lower 2 or 3 chicken rolls into hot oil and fry about 4 minutes until deep golden brown. Drain on paper towel. Arrange on warm plates and spoon a little sour cream over each serving. Sprinkle with paprika and finely chopped onions if you like. Serve at once. Makes six chicken rolls. If you use a deep fryer, set it to 375 and then do 4 at a time. If they are pretty big breasts, leave them for 5 minutes instead of 4 minutes.

LOL LOL LOLOh Boy you should be fed up by now! LOL.. Try the above recipe.. very easy to make.. just line up 3 bread pans flour in one water & eggs in one bread crumbs in one smash, or pound the chicken 1/2 breasts flat squeeze lemon on it lightly salt may add garlic powder too with a chunk of butter, roll the butter up inside3 then rollin flour then egg mix.. then italian seasoned crumbs,, deep fry for approx. 4 minutes at temp in recipe above,,, Yummy!

Very nice Karen but it looks like a bit too much washing up - the point of making the big pot of Chilli was to avoid that. [:)]

Paper plates for the bread crumbs and flour 1 bowl for the egg mix and deep fry them.. serve with low fat or reg. sour cream with chopped onion...

It's so long ago I can't remember - but it was probably with goat's butter and salt and pepper. I recommend goat's butter, it's less greasy than cow's and a nicer flavour.
